Chicken Lo Mein

Ingredients

8 oz package lo mein noodles

2 cups baby bella mushrooms

2 cups broccoli-steamed

2 cloves Garlic-minced

1 tbsp Olive Oil

1 lb chicken tenderloins-cut into chunks

For Sauce:

2 tbps Low sodium Soy Sauce

2 tbsp Garlic Chili Sauce

1 tsp. Sesame Oil

1/2 tsp. ground ginger

2 tsp. sugar

1/2 tsp. Siracha hot sauce (optional)

1. Boil noodles according to package. Drain and rinse noodles under cold water and set aside.

2. Mix sauce ingredients together in bowl and set aside.  

3.  In a skillet add olive oil and minced garlic.  Saute 1 minute.  Salt and pepper the chikcen and add to the pan.  Cook through about 8-10 minutes.  Remove chicken.

4. Add butter and mushrooms to pan.  Add 1 TBSP Soy sauce and cook 7-8 minutes.

5. Steam broccoli in separate pot (or in microwave). Add to mushrooms.  Cook an additional 3 minutes.

6. Add Chicken, Noodles, and sauce to pan and toss.  

Travels well in Tervis cups or travel coffee cups.  Will stay warm if running around town on those busy school nights.
