Undercover Nuggets

Ingredients:

1 Cup All-Purpose Flour                                              1 Large Egg lightly beaten

1 Cup Panko breadcrumbs                                         1 Pound boneless chicken breast cut into nugget chunks

1/2 Cup Flaxseed Meal                                               1/2 tsp. salt

1 TBSP grated parmesan                                           Nonstick cooking spray

1/2 tsp. Chili Powder                                                  1 TBSP Olive Oil

1/2 tsp. Garlic powder

1/2 tsp. onion powder

1 Cup Broccoli puree (steamed broccoli pureed in blender with a teaspoon or so of water)

 

Instructions:

1. Grab 3 containers for dredging:

1st -- Flour    

2nd--Combined Egg and Puree Mixture    

3rd--Breadcrumbs, Flaxseed Meal, Parm, Garlic, Onion, and Chili Powders

2. Season Chicken with salt.  Dip nuggets into Flour, then into Egg/Puree Mixture, then into breadcrumb mixture.  Make sure they are completly coated.

3.  Coat nonstick pan with cooking spray and heat over medium heat.  Once hot add oil.  Place nuggets in pan in a single layer and cook 3-5 mins or until crispy golden brown then flip and cook another 4 mins until cooked through.  

4. Enjoy!
