Orange Chicken

The kids and I took a trip to the Richmond Zoo this summer.  On the way home my Dad took us to a Panda Express.  Now I don't know if it was that we were all starving or that it was THAT good, but we all have been talking about the ORANGE CHICKEN ever since.  I researched some recipes and after adding a secret ingredient and crisping up the chicken...we have a winner!

Ingredients

For the Chicken:

1 lb chicken tenderloins, cut into chunks

1 cup flour

1 cup cornstarch

1 cup seasoned Panko bread crumbs

2 eggs- lightly beaten

Olive Oil/butter for pan

For Sauce:

1 cup BBQ Sauce

1 cup Orange Marmelade

2 TBSP Soy Sauce

2 TBSP Garlic Chili Sauce

Instruction 

1. Heat Olive oil and butter in skillet over medium heat.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

2. Mix flour and cornstarch together in a bowl. Coat chunks of chicken in flour/cornstarch mixture.  Then coat them in the eggs in a second bowl and finally put them in the panko and coat them well.  

 

 

 

 

 

 

 

 

 

 

 

3.  Cook chicken in batches about 4 minutes a side or until cooked through.  Add more oil/butter as needed.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

4. For sauce combine all the ingredients and pour over cooked chicken.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

5. Serve with rice or lo mein noodles.
