Pizza Puffs

These were a hit for dinner tonight and the kids loved helping.  These will be a great on the go dinner on those late nights.  Very easy to make a couple batches and freeze them. The possibilities are endless.  Really just throw in your favorite pizza toppings.  The magical ingredient is the mozzerallea ball in the middle!  Yum!

  Ingredients                                                 Instructions

  • ¾ cup flour                                                                  1.  Preheat the oven to 375 degrees. Grease a muffin pan very well.

  • 1 teaspoon baking powder                                 2. Combine flour, baking powder and spices in a bowl. Add in milk and egg and stir until combined.

  • ¾ cup milk                                                                  3. Stir in shredded cheese and salami (or any toppings you'd like)  Allow mixture to stand for 10 minutes.

  • 1 egg, lightly beaten                                                   4. Divide among the muffin cups then gently press 1 mozzarella ball into the center of each muffin.

  • 1 cup shredded mozzarella cheese                          5.  Place one piece of pepperoni (optional) on top and bake for 20 minutes.

  • ¾ cup chopped salami (or sausage)                       6.  Once out of the oven spoon one teaspoon of marinara sauce on top of each muffin.       

  • ½ teaspoon each basil & garlic salt                             **if you are traveling with these in the car put the sauce in a condiment cup with a lid!**  

  • ¾ teaspoon oregano

  • 9 mini mozzarella balls

  • sliced pepperoni 

  • ½ cup marinara sauce

These travel great in the lidded cups.  I put three puffs and then a small condiment cup of marinara sauce on top.
